Description
This copycat Costco cilantro lime shrimp recipe features juicy shrimp tossed in a bold roasted garlic, lime, and herb sauce. Ready in 20 minutes!
Ingredients
1 small head garlic
1 cup chopped fresh cilantro leaves
1 lime, juiced
1 tablespoon dry white wine (optional), or substitute with more lime juice
3 to 4 tablespoon extra virgin olive oil, plus more for coating the shrimp
2 tablespoon harissa (or your favorite chili paste)
1 1/2 pounds peeled and deveined large shrimp (pre-peeled thawed frozen shrimp work well)
Kosher salt
Black pepper
Instructions
1. Preheat oven to 400°F.
2. Trim top off garlic head, drizzle with olive oil, wrap in foil, and roast for 10–15 minutes.
3. Cool garlic, then peel and finely chop.
4. In a bowl, combine garlic, cilantro, lime juice, white wine, olive oil, and harissa.
5. Pat shrimp dry, season with salt and pepper, and drizzle with olive oil.
6. Grill, skillet-cook, or oven-roast shrimp until just pink (about 2–3 minutes per side).
7. Toss hot shrimp in the prepared sauce and serve immediately.
Notes
You can roast the garlic in advance and store in the fridge.
This dish is flexible—use parsley, mint, or basil if you don’t like cilantro.
Want it milder? Swap harissa for a pinch of chili flakes.
