Description
Baked French Toast made in muffin cups. These muffins are too cute and a fun breakfast treat! Soft, sweet, and topped with cinnamon streusel.
Ingredients
1 loaf French bread, cut into ½ inch cubes (about 12 cups)
2 1/2 cups milk
6 large eggs
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 cup cold butter
1/4 cup light brown sugar
1/4 cup all-purpose flour
1/8 teaspoon ground cinnamon
Pinch of salt
Butter and maple syrup for serving (optional)
Instructions
1. In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.
2. Grease a 12-cup muffin tin and fill each cup with about 1 cup of bread cubes.
3. Slowly pour egg mixture evenly over each cup, pressing the bread down gently.
4. Cover and refrigerate for at least 2 hours or overnight.
5. Preheat oven to 350°F when ready to bake.
6. In a small bowl, mix butter, brown sugar, flour, cinnamon, and salt to make streusel.
7. Remove muffins from fridge, top with streusel, and bake for 25 minutes until golden.
8. Let cool for 5 minutes, then remove and serve with butter and syrup if desired.
Notes
Use day-old or slightly stale bread for best texture.
You can swap French bread with brioche or challah for richer muffins.
Store leftovers in the fridge up to 4 days or freeze for 2 months.
