Description

Power up your day with this delicious Kodiak protein waffles recipe! Made with banana and optional chocolate chips, these thick and fluffy waffles are loaded with protein and fiber to give you energy to face the day. A simple and healthy breakfast that can be made in less than 20 minutes!


Ingredients

1 1/4 cups Kodiak Cakes Power Cakes Flapjack & Waffle Mix

1 medium ripe banana

3 large eggs

1 cup milk of choice

1/3 cup plain Greek yogurt

2 tablespoons melted butter

1 tablespoon honey

1 1/2 teaspoons vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup mini chocolate chips (optional)


Instructions

1. Preheat waffle iron and spray with cooking spray.

2. Place all ingredients (except the chocolate chips) into a high-speed blender and blend until smooth.

3. Let the batter rest for 5 minutes. If too thick, add more milk.

4. Stir in chocolate chips, if using.

5. Pour about 1 cup batter onto the waffle iron. Cook until golden brown, about 5–6 minutes at setting #2.

6. Repeat until all batter is used.

7. Serve with desired toppings such as banana slices, peanut butter, walnuts, chocolate chips, or maple syrup.

Notes

Use overripe banana for natural sweetness.

Scrape blender sides to ensure all ingredients are mixed.

Adjust batter with more mix for thicker waffles, more milk for thinner.

Cook longer for crispier edges.

Recipe yields about 10 small 4-inch waffles; nutrition is per small waffle.
